The environment is the specification.
Dust, temperature, vibration, wash-down, vehicle movement and distance all defeat equipment chosen from an office catalogue. Production areas need coverage where there is no ceiling to mount to, and cable runs that exceed what copper will carry.
Downtime is also costed differently. An hour of network failure in an office is an inconvenience; on a production line it has a number attached, which changes what resilience is worth.
